General information:

Coriander (Coriandrum sativum), also known as coriander, Chinese parsley or dhania, is an annual herb of the Apiaceae family. Coriander is native to regions stretching from southern Europe and northern Africa to southwest Asia. It is a soft plant that grows up to 50 cm (20 in) in height. The leaves are variably shaped, broadly lobed at the base of the plant and thin and feathery higher up on the flower stems. The flowers are borne in small, white or very pale pink, asymmetrical umbels, with the petals pointing away from the center of the umbel longer (5-6 mm or 0.20-0.24 inches) than those pointing towards it ( only 1-3 mm or 0.039-0.118 long). The fruit is a globular dry schizocarp 3–5 mm (0.12–0.20 in) in diameter. The seeds are generally used as a spice or added ingredient in other foods or recipes, although they are sometimes eaten alone.
All parts of the plant are edible, but the fresh leaves and dried seeds are the parts most traditionally used for cooking. Coriander is common in the cuisine of South Asia, Southeast Asia, India, the Middle East, the Caucasus, Central Asia, the Mediterranean, Tex-Mex, Latin America, Brazil, Portugal, China, Africa, and Scandinavia.
